Tortilla Salad

A crunchy salad of Mexican flavors.

Tortilla Salad

Ingredients for 6 portions

  • 2 packages (614 g) Mori-Nu Silken Tofu Firm
  • 170 ml olive oil
  • 60 ml white wine vinegar
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 small red onion,chopped
  • 2 large tomatoes, diced
  • 1 medium avocado, diced
  • 450 g mixed greens
  • 14 blue corn tortilla chips, slightly broken

Instructions

  1. Drain the tofu, then cut it into large cubes. Place the cubes in a shallow baking pan and set aside.
  2. In a small mixing bowl, combine the olive oil, vinegar, cumin and chilli powder, and mix well. Pour the olive oil and marinade over the tofu cubes and let them sit for at least 1 hour.
  3. In a large salad bowl, lightly toss the chopped onions and diced tomatoes and avocado pieces, and mixed salad greens. Top the salad with the marinated tofu and garnish with blue corn tortilla chips.

Tips

Also use Extra Firm tofu depending on your preference of softness
