Mango Couscous Salad

Mango Couscous Salad

Ingredients for 4 portions

  • 1 package (305 g) Mori-Nu Silken Tofu Soft,
  • 200 ml water
  • 50 g fresh cubed mango
  • 170 g couscous
  • 1 tbsp tahini
  • 1 tbsp orange juice
  • Pinch ground ginger
  • 90 g cooked legumes
  • 40 g raisins
  • 8 g fresh coriander leaves
  • 90 g assorted diced dried fruits

Instructions

  1. Prepare couscous and set aside.
  2. Meanwhile, stir together tahini and orange juice to make a smooth mixture.
  3. Place tofu in a large mixing bowl and whisk together until light and smooth. Whisk in tahini and ginger. Stir mango and raisins in the cooked tofu.
  4. Fluff couscous with fork to break up any lumps. Stir it into the mango mixture. Add coriander and dried fruits; stir until blended. Cover and refrigerate until chilled, about 3 hours.
