The history of tofu

2nd Century BC

The birthplace of tofu is considered to be China, and its origins are said to date back to around the 2nd century BC. Although no written documents about tofu from the Tang Dynasty have been confirmed, it is believed that tofu existed by the mid-Tang era.

710 – 1782

There are no clear records of when tofu was introduced to Japan, but it is thought to have been during either the Nara period (710–794) or the Heian period (794–1185). Later, in the Edo period, tofu spread as a common food among the general population, and the publication of the tofu recipe book “Tofu Hyakuchin” in the mid-Edo period (1782) made tofu even more popular nationwide.

Today

Today, tofu is a familiar part of daily cuisine in Japan. In recent years, tofu has gained global attention not only in Japan and Asia but also around the world as a high-quality plant-based protein source.

The types of Japanese tofu

Japanese tofu is generally classified into two types: firm tofu (momen tofu) and silken tofu (kinugoshi tofu). Both types are made by adding coagulant to soy milk and allowing it to solidify. Firm tofu is made by pressing to remove excess water, giving it a denser texture.

Silken tofu, on the other hand, is not pressed, resulting in a softer and smoother texture.

 In China and other Asian countries, there are firmer types of tofu with textures different from those in Japan. In the United States and Europe, in addition to Japanese-style and Chinese-style tofu, there are also variations with unique textures, including smoked or herb-flavored tofu.

Features of Mori-Nu tofu

Product Lineup: Mori-Nu Tofu is a packaged silken tofu. By adjusting the protein content, Mori-Nu offers four levels of firmness, ranging from very soft to firm, all without the pressing process. All varieties maintain the smooth texture characteristic of silken tofu. They are plain in flavor like traditional Japanese tofu, but pair well with sauces and dressings. With four different firmness levels, Mori-Nu Tofu can be used not only for Japanese dishes such as miso soup and hot pots but also for dips using a blender, salad toppings, or as a meat substitute in dishes like stir-fries.

Super Soft

Extremely soft, similar to “Yose Tofu”, and is suitable for hot pot dishes, desserts with sweet syrups, or blended as a base for dips.

Soft

Typical traditional Japanese silken tofu. Ideal for chilled tofu (hiyayakko), miso soup, and other Japanese dishes.

Firm

Recommended for those who find ordinary silken tofu too soft. Although its texture differs from momen tofu, it is firm enough to be used as a substitute in many dishes.

Extra Firm

A firm tofu that still retains the smoothness of silken tofu and is resistant to breaking apart. Excellent for stir-frying and also blends well with dressings, making it suitable as a salad topping.

Asian Dessert

Mori-Nu has released a new dessert-type tofu. A silken tofu that is flavored with natural flavoring and sweetness. It can be enjoyed like a plant-based pudding. We invite you to try it.

Other Features

Most tofu requires refrigeration and has a short shelf life of several weeks to a few months. However, Mori-Nu Tofu can be stored at room temperature for an extended period before opening because it is sterilized and filled in aseptic packaging. The compact packaging makes it easy to carry and convenient to keep stocked at home for whenever you need it. Since there is minimal separation of water before opening, changes in flavor are minimized during the shelf life, allowing you to enjoy it at its best at any time.
