Chorizo Tacos

Ingredients for 5 tacos

  • 2 packages (618 g) Mori-Nu Silken Tofu Extra Firm

Sauce

  • 50 ml soy sauce
  • 2 cloves garlic, minced
  • 40 ml olive oil
  • 25 ml apple cider vinegar
  • 25 ml ancho or guajillo chili powder
  • 10 g paprika
  • 2 g dried oregano
  • 1 g ground cumin
  • 1 g ground coriander
  • Pinch of ground cloves, ground cinnamon and salt to taste

Tortillas

  • 5 corn tortillas, warmed

Toppings (optional)

  • Red cabbage
  • Green and red chilis
  • Tomato
  • Red radish
  • Cilantro
  • Lime wedges

Instructions

  1. Mix all sauce ingredients in a medium size bowl.
  2. Add tofu and crumble into sauce.
  3. Using large frying pan cook over medium-high heat until browned/crisp, stirring occasionally.
  4. Assemble tacos with tortillas and toppings.
