Tofu Kabobs

Everything tastes better on a stick! Cubes of tofu and vegetables are perfect meatless party food.

Tofu Kabobs

Ingredients for 4 portions

  • 1 package (308 g) of Mori-Nu Silken Tofu Extra Firm
  • Marinade of your choice
  • 16 small mushrooms
  • 1 sweet red bell pepper, cut into 2 cm cubes
  • 1 zucchini, cut into 2cm cubes
  • 8 cherry tomatoes

Instructions

  1. Cut tofu into 2cm cubes. Cover with marinade and refrigerate for at least 4 to 6 hours.
  2. Thread vegetables and tofu onto eight 25cm skewers.
  3. Grill skewers, or place on baking sheet under broiler for 10 minutes, turning and basting with extra marinade as needed.
  4. Serve with rice.
