Tofu & Salmon Salad

This salad of salmon, tofu, and tomatoes drizzled with an Asian-inspired sauce makes a refreshing summer appetizer.

Tofu & Salmon Salad

Ingredients for 6 portions

  • 2 packages (610 g) Mori-Nu Silken Tofu Soft
  • 1 can pink salmon, chilled
  • 3 medium tomatoes, chilled
  • 3 green onions, chilled
  • 90 ml vegetable oil
  • 1 tbsp sesame oil
  • 180 ml soy sauce
  • 1/2 lemon, juice only

Instructions

Salad

  1. Drain tofu, cut into equal pieces, and layer on bottom of serving tray.
  2. Drain salmon and sprinkle bits over tofu layer.
  3. Remove the seeds, and chop the tomatoes; sprinkle over salmon layer.
  4. Chop green onions and sprinkle over tomatoes.

Sauce

  1. Should be prepared beforehand.
  2. Heat vegetable and sesame oil in pot until first wisp of smoke appears.
  3. Place pot in sink because it may splatter.
  4. Carefully pour soy sauce and lemon mixture into hot oil and stir.

Finish

Spoon sauce over salad just prior to serving.

Tips

Also use Firm or Extra Firm tofu depending on your preference of softness
